Penguin is absolutely a must for every single beginner. Not only it is extremely simple, but also the way we create it is very similar to other animals patterns, hence the experience coming from this creation will surely be handy in our future encounters with origami. On top of that, it's pretty unique - most tutorials for beginners focus on creating a simple cat or dog, while not many actually mention penguin, even if it may actually be easier than the two mentioned above (everything depends on how detailed we want it to be). Best, most universal color of our paper is black and white obviously, but we can as well aim for something a little bit different - for example a rainbow penguin. If we manage to make the colors right, we can get a really outstanding and amazing creation, but for the first try it's best to go with the universal and native color (black and white). Despite it being a rather simple pattern, there are many ways how to create it and the only limit is our imagination.
